Mmmmm - Fresh rabbit from Jackson Live Poultry Market in the Bronx comes with kidneys and liver intact - what a delicacy, and something hard to find on this side of the pond! Sauted in sweet butter till just pink inside with onions and parsley, sauced with a splash of wine and a tablespoon or two of cream, salt & pepper and it's a dish fit for a king! Serve with toast points, over rice, or alone with a piece of crusty bread for sopping up the sauce!! DIVINE!
